SHERRY TOUR IN CADIZ

The best way to discover the wine making process is with this sherry tour in Cadiz.

Some of the cities you’ll visit are Jerez de la Frontera, Trebujena, Sanlucar de Barrameda, Chipiona, Rota, Puerto de Santa Maria o Chiclana de la Frontera.

We have some routes to choose according the time you have available for this activity. Some of them are:

From the vine to the glass: You will learn the sherry secrets from the beginning of its making. The trip will start in a vineyard to familiarize yourself with the terrain and the different types of grapes. Later, in a cellar, you will discover the treasures that the time and the know-how of the winemakers offer.

Jerez route: In this alternative you will get to know the key points of Jerez: Sanlucar de Barrameda, El Puerto de Santa Maria and Jerez de la Frontera, cities where you will visit a winery for each one.

The miracle of time: This option includes two wineries from the Marco de Jerez. One of them produces only Palo Cortado and another specialized in VORS wines (wines of more than 30 years) in which you can also admire one of the best private collections of Spanish painting.

SHERRY CELLARS ROUTE

Your driver and your private guide will pick you up at the door of the hotel to start a route full of flavors. We will visit the beautiful towns of Jerez, and next to the sea, the port of Santa María and Sanlúcar de Barrameda, where we will also eat in one of the most famous fish restaurants in the area. Its specialty is the shrimp from Sanlúcar, the bonito and the seafood from the mouth of the Guadalquivir river.

The wineries will present their centenary barrels, essential to mature these wines that are drunk up to thirty years old. We will make tastings in each one to know how to choose the variety that we like the most for each occasion.

Wine tasting in Ronda

In this activity we will discover the basic principles of wine tasting in one of Ronda’s most fascinating wineries. The area around Ronda has been known for winemaking since Roman times and the tradition continues to this day. The trip will take you through a beautiful Andalusian countryside dotted with typical white villages and a landscape full of olive, orange, almond and avocado trees.

The 2-hour tour of the winery will start with a walk through the vineyards, where your guide will explain the task of recovering the lost grape varieties and the difference of growing conditions on the farm according to the different altitudes and soil conditions.
Visitors will be taken to the barrel room where the wine making process will be explained. Finally, your tour of the winery will end with a wine tasting accompanied by a selection of tapas.
Then we will accompany you to discover the delicious local gastronomy by the best and most traditional taverns of Ronda. In them you can taste local tapas such as gazpacho a la serrana, sausages from the Serrania, croquettes of puchero, scrambled eggs of wild asparagus, sirloin steak, oxtail and, for dessert, delicious sweet yolks from the Tajo.
In this tour we will get to know the urban center of the millenary Ronda, walking through the old Arab medina and its historic corners, as well as famous places such as Calle de la Bola, neuralgic center of the modern Ronda. Of course, we will also enjoy the spectacular views of the cornices of the Tajo de Ronda.

CAVIAR AND CHAMPAGNE

The first caviar certified as ecological in the world is generated between the mountains of Granada, Sierra Nevada, since 1963. Because on the Spanish coast, until the seventies of the nineteenth century, sturgeons climbed their rivers to reproduce. Even in the 30s there was caviar production in the nearby Guadalquivir River. Even Miguel de Cervantes mentioned caviar in his work El Quijote, back in 1615.
The caviar, always exotic and desired, is generated in natural waters of the sierra, coming from the melting, pure and crystalline, where the females need about 16 years of breeding. Twice as long as most of the usual market caviar. A real treasure!
Upon arrival, we will make an exclusive visit to the facilities, being able to see sturgeons in all phases of growth, while our expert explains the processes of breeding and production.
Then we will sit down to receive a caviar tasting class, attending to the varieties that are produced in this sturgeon sanctuary. We will accompany it with Champagne to have the perfect pairing, and we will finish with a sip of vodka to remember its origins.

CODORNÍU WINERY

Visit Codorniu: A fascinating journey to the origins of cava.

Codorníu is synonymous with the history of a family of wine growers that dates back to the 16th century. It is the oldest family business in Spain and one of the oldest in the world. It currently has more than 450 years of history. Manuel Raventós, the great promoter of Codorníu, contracted in 1895 the modernist architect Josep Puig i Cadafalch (contemporary of Gaudí) to expand the winery. The building he built symbolizes the fruitful alliance between nature and human labor and is a tribute of stone to the silence of the cava. Since 1976 they are an Archaeological Historic Monument and one of the most impressive examples of architecture dedicated to the production and aging of cavas.
